This quinoa salad is a simple and refreshing option for a stress-free lunch. Makes a great picnic and potluck dish, too!
Shopping list (4 Servings):
- 1 cup tri-color quinoa
- 1/4 cup kalamata olives
- 1/4 cup cherry tomatoes
- juice of 1 large lemon
- 1/4 cup crumbled feta
- 1/4 cup sliced almonds
- 4 tablespoons olive oil
- 3 tablespoons red wine vinegar
1. Thoroughly rinse and cook quinoa according to your rice cooker’s specifications.
2. After cooked quinoa has cooled for ten minutes, combine all ingredients in a large bowl, stir until well combined, and serve!
