Breakfast Fritatta with Spinach, Sausage, and Cheese

Required Equipment: Rice Cooker, Mixing bowl, Whisk, Spatula

All the taste and glamour of a fancy brunch without the rigamarole! This recipe is a snap to make and is sure to impress.

Shopping list (4 Servings):

  • 1/3 pound ground sausage
  • 6 eggs
  • 1/4 cup shredded cheddar cheese
  • 6 oz frozen spinach, defrosted and drained
  • 2 teaspoons oregano
  • pinch salt and pepper
  • sour cream and paprika for serving (optional)

1. Place ground sausage into the rice cooker and run for a full cycle. Use the “quick cooking” setting, if available.

2. After the cooking cycle has completed, drain any liquid and break the cooked sausage into smaller pieces with a spatula.

3. Whisk eggs, and add to the bowl along with cheese, spinach, oregano, salt, and pepper. Mix gently.

4. Run for another cooking cycle (again, “quick cooking” setting is best) and serve immediately. Top with cheddar cheese and chopped green onion if desired.
